Delicado, Suave Con notas a fruta citrica como la lima y limon, y fruta de hueso como el albaricoque y la nectarina, Floral como el Hibisco, el azahar, jazmin. Es muy jugoso, equilibrado y fresco
PROCESO:
Cosecha manual, se hace una selecccion por tamaño y densidad.
Posteriormente se hace una esterilización con agua ozonizada y otra esterilización con luz ultravioleta.
Se realiza una fermentación de las cerezas durante 48 horas, durante la fermentación de las cerezas, se añade levadura (Saccharomyces pastorianus).
Posteriormente se despulpa la cereza y se realiza una fermentación durante 68 horas.
Durante la fermentación de las cerezas, se producen jugos naturales del grano que se incorporan a la segunda fermentación después del despulpado.
Posteriormente se lava y se secan los granos durante 48 horas a 38 grados centígrados.
