La Macarena, en Piendamó, Cauca, forma parte del trabajo de Wilton Benítez. El productor aplica el mismo nivel de control y conocimiento desarrollado en Granja Paraíso 92 para demostrar que una variedad como Castillo también puede ofrecer una taza singular y de gran definición.
EL PROCESO
La fermentación es anaeróbica y utiliza levaduras seleccionadas para dirigir la transformación de los azúcares de la cereza. El objetivo no es crear un sabor fermentado dominante, sino aumentar la claridad del melocotón, ordenar el dulzor y dar profundidad al cacao.
EN TAZA
El melocotón abre una taza jugosa; la caña de azúcar y el caramelo construyen un dulzor limpio. Los nibs de cacao cierran el perfil con profundidad, sin ocultar la fruta.
EN BARRA
