Kawa została sprowadzona do Gwatemali w 1760 roku przez europejskich osadników, a uprawa zaczęła się czterdzieści lat później. Na początku XIX wieku plantacje indygo w Gwatemali zostały zniszczone przez szarańczę, a pięćdziesiąt lat później wynalezienie barwników chemicznych w Europie sprawiło, że produkcja indygo w Gwatemali stała się nieopłacalna. W tym czasie rząd zaczął zachęcać do produkcji kawy jako dobra handlowego. W 1859 roku do Europy wyeksportowano około 400 kwintalów (kwintalów = 100 funtów) kawy. W 1860 r. eksport kawy wzrósł prawie trzykrotnie do 1100 kwintalów, a w 1868 r. rząd wprowadził program, w ramach którego rozdano rolnikom wiejskim ponad milion sadzonek. W latach siedemdziesiątych XIX wieku prezydent Justo Rufino Barrios wprowadził szereg polityk mających na celu uczynienie kawy głównym dobrem gospodarki Gwatemali. W 1880 roku sprzedaż kawy stanowiła dziewięćdziesiąt procent eksportu Gwatemali.
